Foothills Market: The Market is Open - February 5
Our feature this week on Foothills Market is our selection of meats. We have a wide variety of cuts of beef, lamb, and pork, ranging from bratwurst to leg of lamb to t-bone steaks and more.
When you buy meat from Foothills Market, you know the animals did not spend any time in a factory-style feedlot. These animals were on the farm until taken for processing. Most of the meat was prepared at Advanced Meat Processing in Van Buren, which focuses on humane treatment of animals. AMP also has a USDA inspector on site, so you know your meats are up to the same standards (or better) at larger facilities.
We also have limited quantities of fresh vegetables, including some baby collards and kale from the Food for Thought Garden and some celery stalks grown in the new aquaponics house at Happy Horseshoe Farm.
Shop the market, place items in your cart, and hit the “Place your order” button. We’ll gather your items and have them ready for pickup Friday afternoon between 4-6 at the Food for Thought Garden house, 815 N. Hillcrest.

By some calendars, spring is here! In Celtic tradition, this weekend marked Imbolc, the half-way point between the winter solstice and the spring equinox, and the beginning of spring. Some years, weather wouldn’t cooperate with this astronomical event, so people would watch for badgers coming out of their burrows for guidance. If one came out and didn’t like what they saw, back they went and there’d be six more weeks of winter. Most of the other traditions of Imbolc have passed away, but we still make a to-do about Groundhog Day.
We may be in for several more weeks of cold, but the daylight hours are long enough now that plants are taking note and waking up. Seeds can sense the daily cycles and those from cool weather plants are starting to sprout on their own. Time for me to finish weeding my garden and put my lettuce, pea, radish, and carrot seeds in the ground!

Other Area Farmers Markets
Most other area markets are closed down for the season or have moved to winter hours. The Athens Farmers Market has closed for the season. They’ll return in April, and you can catch the news on their website. The West Broad Farmers Market is closed for the season, and you can watch for their return on their website here: http://www.athenslandtrust.org/west-broad-farmers-market/. The Comer Farmers’ Market is open on Saturday mornings from 9am to noon. Check www.facebook.com/comerfm for more information. Washington, GA also has a lovely little Saturday market, running on winter hours now on Saturdays from 1-4pm. Folks to the east can check out the Hartwell Farmers Market, which starts bright and early on Saturday morning from 7am to noon, and Tuesday afternoons from noon to 4pm. All of these other markets are separate from ALG (including the Athens Farmers Market) but many growers sell at multiple markets. Please support your local farmers and food producers, where ever you’re able to do so!

Happening for February at LEILANI’S is crisp winter Greens, including Collards, Spinach, and my favorite Swiss Chard, which is an excellent light side dish when sauteed (olive oil & garlic) and a great taste addition to salads. Speaking of salads spicy Red Turnips sliced are a great flavor accent, and cooked Turnips are a tasty low-calorie alternative to potatoes. Bok Choi is also available as a nice flavor for oriental and stir-fry.
Want to remind you that CULTURAL TRADITIONS has some very interesting Sauerkrauts like Garlic Pickle, Ginger Tumeric, “Kimchi” style and Traditional Russian Red. They have some wonderful tastes to add variety to your meals, so give them a look under the Fermented / Probiotic Foods listing in this week’s Market.

Hello!
Any body else starting to hope for an early spring? It’s the time of year when the pickings feel slim, and we look forward to all the abundant crops of warmer weather!
The vegetable offerings are slim this week. We go into winter hoping for a long sustained harvest but it doesn’t always work out that way! We hope some new crops will be coming in in a few weeks if the weather cooperates.
Stock up on your essentials of meat, eggs, baked goods and cheese! There’s some great specials from Bear Creek Farm-

The cold weather slows down plant growth quite a bit, however, so for that reason* we are switching to an EVERY OTHER WEEK schedule! * So that means stock up as you can on meat, eggs, and our storage vegetables! Even the greens are so fresh and well taken care of they have a very long fridge life. So make sure you order enough for 2 weeks!
Our next delivery date after this Wednesday will be Wednesday, February 21st

Recipes
Easy Lemon-Ginger Spinach
Serves 4
2 tablespoons olive oil
1 heaping tablespoon grated peeled fresh ginger
1 1/2 pounds baby spinach
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 tablespoons freshly squeezed lemon juice
Heat the oil in a Dutch oven or large pot over medium heat until shimmering. Add the ginger and cook, stirring constantly, until fragrant, about 30 seconds.
Add the spinach in 2 to 3 batches, along with the salt and pepper in the first batch. Use tongs to toss the leaves after each addition. Cook, stirring occasionally, until wilted, 3 to 4 minutes. Remove from the heat and stir in the lemon juice.

Good afternoon!
Delicious, organic black walnuts are back at the market. All the hard work has already been done, and they’re ready for your favorite desserts: brownies, chocolate chips, banana nut muffins. We like them so much more than English walnuts.
The tomato and eggplant seeds I planted last Saturday have sprouted! I will keep them under lights for another week until I transplant them. Time to work on your garden plans :-)
